Unique in the world
L’Esguard – Total Cooking as a Goal
This wise philosopher of the kitchen arts has devoted such effort to his personal quest of total cooking that he has surpassed all imaginable limits. The pundits of gastronomic criticism have had no alternative but to concede his conceptual superiority and, overcome by it, have opted to ignore his work. Such is the distance marking his singular way of developing and, above all, of interpreting cuisine that the only solution they have found to deal with work so serious, so conceptually elaborate - and so full of creativity - has been to avoid it. Up to a point such incoherence is understandable. This cuisine is so superior, so difficult in its simplicity that either it qualifies for four stars or it is better to duck the issue,. However, despite everything, as Galileo said, E pur si move. – but it does move.
The conceptual and technical level of Miguel Sanchez Romera is really brilliant, so that only incomprehension and the more or less unmentionable aspects of the press can explain the ostracism and the scarce public recognition of his cuisine which, as the title says, is unique in the world.

L’Esguard hailed as Restaurant of the Year
by Catalan Academy of Gastronomy
The Catalan Academy of Gastronomy has named L’Esguard, in Sant Andreu de Llavaneres, as the best restaurant of the year, ahead of El Bulli and Abac. According to its president Miquel Espinot, breakfasting yesterday in the Boqueria, the Academy considers that Miguel Sanchez Romera, chef at L’Esguard, deserves the award “for the indefatigable research into and treatment of food products and the development of culinary techniques leading to the achievement of a total cooking cuisine, in which the pleasure of the five senses are combined and balanced.”
The academy also awarded Xavier Franco, of the restaurant Satio, the accolade of best young cook, considering that “he has found a balance between creativity, the quality of the ingredients, honesty at the table and respect for tradition. (..article continues)
